Gluten-Free, Sugar-Free Bread Buns (Simple, Crusty & Delicious!)

Although I normally follow a keto/carnivore lifestyle, there are days when a simple slice of warm bread with butter feels like the most comforting treat on earth. These gluten-free, sugar-free bread buns are incredibly easy to make, require almost no effort, and taste amazing fresh out of the oven.
They are not keto (they’re made with gluten-free flour, which is naturally high in carbs), but they’re a lovely occasional addition if you want something homemade, clean, and free from unnecessary ingredients.
Ingredients
3 cups gluten-free plain flour
1 tablespoon yeast
1 tablespoon salt
1 tablespoon xylitol
2½ cups water
(Optional for topping) Hemp Seeds, Chia Seeds
Method
Sieve the gluten-free flour into a large mixing bowl.
Add the yeast, salt and xylitol. Mix well to combine all dry ingredients.
Add the water and mix until a smooth dough forms.
Cover the bowl with a clean tea towel and leave the dough to rest for 8–16 hours.
This slow rise gives the buns a lovely artisanal texture.
Once risen, wet your hands and shape the dough into buns.
Place on a parchment covered baking tray, sprinkle tops with seeds of your choice (I like to use hemp and chia seeds - but any small seeds will do) and bake at 230°C for 45 minutes.
For extra-crusty rolls, turn them over after 45 minutes and bake for a further 15 minutes.
That’s it—no kneading, no complicated steps, just simple, rustic bread.

If you make 8 medium buns, each bun will contain around:≈ 33–35g carbs per bun
If you make 10 smaller buns, expect around:≈ 27g carbs per bun
